Did you review the '11 model iFixIt guides? The new unit is the same hardware.
Heres the one on replacing the iMac Mini '11 Hard Drive. You may want to think about adding it as a Second Hard Drive.

The Samsung 830 should work great. It's the Samsung SSD Apple is currently shipping. I can confirm this is what I received in a Mac Mini server (Late 2012). Note, however, Apple uses their own firmware with the drive.

As for the dual drive upgrade, it is time consuming and has challenging parts, but is definitely achievable. Go slow and be mindful. I highly recommend reading the comments people have left on the guide.
