I assume your iPhone is out of warranty which is why (or because) you replaced the batteries to try and fix this issue. Otherwise I would take the iPhone to Apple for replacement under warranty.
I believe you COULD have a faulty charing-IC (or set of components). This is a very common failure in iPhone 5.
A good way to tell is to let your battery drain until the iPhone shuts off on its own. Then try to recharge it, making sure you are using a known good (better if original) cable and a known good charger.
- If it does not charge and restart (usually takes 5-15 minutes), it means the fault indeed lies with this charging-IC. The iPhone should not restart anymore until you have the culprit component replaced using the services of a professional repair shop or repair technician with micro-soldering skills. And I would not throw away the batteries you replaced, because I believe they are not at fault.
- If, however, your iPhone does restart after the battery had drained out completely, it could mean many things such as:
You could be using bad quality batteries (very common).
You could have excess battery drain due to software issues (back-up your iPhone, restore software using iTunes, re-install your bak-up. If you need detailed instructions let us know here).
I'd say it is better to start with the battery-drain-then-recharge-test to confirm or rule out the charging-IC possibility.

If all battery's are dying like that then it's the U2 chip that's the problem on the motherboard

If the problem consist on the charging-IC, who will repair that? Apple doesn't want to deal with my phone because I already replace the Apple battery with a third party vendor. l
