Selective migration of apps and or data

I am new to migration so I have a few questions.

First can I choose what gets transferred? For example I would like to reproduce all my mailboxes and mail accounts and all saved emails but I don't want to copy the Mail application itself.

Second. Can I choose which applications to transfer and where do they go? I have Adobe Photoshop on an ssd drive and the new computer has a 120 gig ssd and a 2 Tb HD. However the ssd has the system in it and remains invisible within a "logical group" how can I choose it as the place to put Photoshop and will it work there as intended?
