What to do to return the photos original dates and sorting folders

After transfering all photos and video from the old sd card to phone storage then to the new one, all sorting folders where cancelled, all photos/videos were gathered in a folder named 'gallery', and all dates were changed from the original one to the transfering day date. What should i do to fix the whole thing? I need your necessary help.
