How to unplug and plug the touch pad cable?
I'm actually following your iPad2 tear down procedure and I'm stuck with the cables..
Would you advise me how to unplug and plug back the touch pad cable?

I'd recommend following this repair guide which explains how to replace the LCD in more detail. In general, repair guides help a lot more for replacing parts, while teardowns will just show you all of the fun inner workings of the device.

By the way, what I need to know is not how to plug or unplug the connector of LCD but regarding the touch pad connector.
If you have another guide for this connector, please let me know..
This connector looks very difficult to unplug and plug back so I need your advice!
