Backing up the Notes?

I use an old iPod touch (iOS 6.1.6 and stuck with it) for listening to music and also writing short stories in the Notes app on ocassion. I regularly email the texts to myself but I update the stories more often than I send these emails.

Since this iPod refuses to sync with iTunes any longer, is there a PC application (ideally free) that will allow me to backup my Notes so I don't lose anything when the iPod goes to iPod heaven?
