I installed a new charging port to my pixel 3 recently, and now others always tell me they can hear themselves echo, whether on speaker or not. When the person is on speaker though, the other person on the line tells me the echo of themselves is a lot worse.
I'm guessing its probably some gasket that separates the speaker and the mic that may have been damaged?

There is suppose to be a slight echo so you can hear yourself talking. I think in a mobile phone that is accomplished in electronics.
The echo the person on the other end is hearing is because the mic is picking up the speaker. If it is also echoing when not on speakerphone, then the ball of foam that surrounds the mic may be missing. That is normally pretty well attached and hard to remove the mic without the foam. There may also be an additional barrier of rubber or foam.
