I have an iPhone 7 which is almost completely wrecked. However, the logic board survived. Therefore I was wondering if I could buy a new iPhone 7 and swap the logic board to restore the data. (I don't mind if some features don't work, as long as I get my data back. Also would be great if someone could tell me what features will not work)

Shahad Mustafa, Yes, taking your logic board that has data on it, and putting it into a new housing, will work just fine assuming that the logic board is 100% working. There can be “hidden” damage on the logic board that need addressing.
Many times, to do simple data recovery, you don’t even need a housing. You just need the logic board, a screen, a battery and a charge port assembly. I just hook it all up on my work bench (ESD mat) and do it from there.
If it’s your first time, getting a housing with all parts is the simplest and easiest way :)

I beg to differ. I believe reinstalling into a new housing is a fair bit longer and more complex to do than the method you provided.
@Frankie Vaughan Both yes and no, because we assume this is the first of this type of repairs OP is doing. It may take a few minutes longer in actual time, but it’s also safer for OP. Doing data recovery without a housing, and having a logic board, screen, battery, charge port assembly flailing about on the work bench (without a decent work mat) can cause more problems until you’re comfortable doing it, which will increase possible errors and further damage.
