Since the new MacBook Pro with Retina Display does not use a standard 2.5" SATA storage device, if I want to replace or upgrade my SSD drive, how can I move my files from the old one to the new one?
I mean, cloning the drive, so I don't need to reinstall everything, like iFixit show on this video.

AFAIK at this time Retina Macbooks use a proprietary drive, and there are no 3rd party upgrades.
As long as the drive you are cloning from is smaller than the one you are cloning too, you'll have no problems.
You could also use TimeMachine or Startup/Migration Assistant, or Disk Utility:Restore.
