I’ve got a pink version of the watch by accident and they just sit and I can’t do anything with them, because I don’t really want to wear pink watch. Could I just but a broken watch for like 20 bux and change the case by completely reassembling the watch?

I believe this shiuld be possible. The only thing that doesn't seperate from the housing is the rear sensor assembly, so as long as the watch doesn't have a bad rear sensor, you should be fine. Refer to the screen replacement guide for details on how to work on the watch.
