How can I change the default mode?

How can I switch out of the camera's default mode?

When I go to take a picture the camera is automatically set to a mode. ex. portrait long shot close etc. how do I make the default mode change so it automatically goes to a specific mode when I turn on the camera.

Check the menu, under settings you can change the default mode. You can also manually scroll through your modes each time you take a picture or video.
