Temp dropping while driving

2006 GMC Yukon xl Denali with 6.0. driving down the road the temp will go from 210 and drop to zero and bounce back up and the truck tries to shutdown when it gets low and it not constant. The water pump, thermostat, thermostat housing, temp sensor and temp sensor harness have all been changed out and the issue is still there. Anyone have any ideas?
