Hi,
Does anyone know if a used screen from a M2 or M3 15" Air would 'work' on the 2025 M4 model - as the screen resolution is the same but the FaceTime camera is different. TrueTone won't work, but wondering if the screen would at least work?

Sorry this is such a new system I doubt any one has tried. Why do you want to down grade your new 2025 system or do we have things backwards?
In any case Apple offers self repair options either way and depending on why you want to do this your 2025 system is still under warranty!
Have you even visited either an Apple Store or Authorized service center to see what they say?

It’s suffered accidentally damage to the screen but is out of the 90 day AppleCare warranty so the screen replacement cost is >£600 - so just exploring if a M2/M3 screen could be sourced for cheaper.

This is not a hard part to replace (just expensive) here's the Apple Repair Manual for your system and here's The Apple Self Service Site to order (option #2) And the needed parts info Exploded View and Orderable Parts and the listing of the different colors part numbers:

To select the one you need to get. Once installed you'll be able to calibrate it to your system gets 100% of it's functionality restored.

A 15" M2 or M3 MacBook Air screen might display an image on the 2025 M4 model since the resolution matches, but it’s not fully compatible. You’ll likely lose True Tone, FaceTime camera, and color accuracy due to firmware and connector differences. For full functionality, use the M4-specific screen.

For the same price as a repair (prob far less) - buy a second hand 13 inch (12.9) iPad (older model) and run Yam Display via usb cable - it works really well - you also get touch screen as a bonus :)

Update
Ok so I managed to get a M3 screen for about a third of the price and now have a working screen again on my M4. As expected, the camera doesn't work (the connector to the logic board is actually slightly different so had to tape over the connections) as well as no mic or ambient sensor - so not perfect, but i can use the iphone continuity feature instead if needed. It'll do me fine for now and maybe try a LCD panel replacement on the original screen sometime in the future.
